CUCUMBER, TOMATO AND AVOCADO SALAD
Ingredients:
2 cucumbers, sliced
2 cups cherry tomatoes, diced
2 ripe avocados, diced
1/4 red onion, thinly sliced
2 tablespoons fresh parsley or cilantro
3 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Instructions:
Add cucumbers, tomatoes, avocado, red onion and fresh herbs to a large bowl.
Drizzle with olive oil and lemon juice.
Season with salt and pepper.
Toss gently to keep avocado creamy but not mushy.
Serve fresh and enjoy!
CREAMY POTATO AND EGG SALAD
Ingredients:
600g potatoes, boiled and diced
4 boiled eggs, diced
1/2 cup boiled carrots, diced
1/2 cup peas
1/2 cup mayonnaise
1 tablespoon mustard
2 tablespoons fresh parsley
Salt and pepper to taste
Instructions:
Add the boiled potatoes, diced eggs, carrots and peas to a large bowl.
In a separate bowl, mix together the mayonnaise, mustard, salt and pepper.
Pour the dressing over the salad.
Toss gently until everything is creamy and well combined.
Sprinkle with fresh parsley and refrigerate before serving.
CHICKEN AND PASTA SALAD
Ingredients:
300g cooked pasta
2 cups cooked chicken, diced
1 cup chopped cucumber
1 cup cherry tomatoes, halved
1/2 cup corn
1/2 cup grated cheese
1/2 cup mayonnaise or cream dressing
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Place cooked pasta in a large bowl.
Add chicken, cucumber, cherry tomatoes, corn and grated cheese.
Pour over mayonnaise or cream dressing.
Season with salt and pepper.
Blend until creamy and colorful.
Garnish with parsley and serve cold.
TUNA AVOCADO SALAD
Ingredients:
2 cans tuna, drained
2 avocados, diced
1 cup cucumber, chopped
1 cup cherry tomatoes, halved

1 tablespoon lemon juice
Salt and pepper to taste
Fresh herbs to taste
Instructions:
